We played golf at Vista Vallarta and then went across the road to Rosie's, a thatched roof restaurant with the best tacos around. A couple of Rosie's tacos, a Diet Coke, Corona or Margarita and the day is perfect. Rosie is the nicest lady who lived in California for many years before going home to PV and opening her own place. It's in a rural area replete with her cat and dog and chickens, turkeys, cows, etc. It's a very enjoyable experience to meet her, talk with her, and bask in the serenity of her place.
