My wife and I love to try new places, and we are suckers for a good queso, and the chips matter just as much too. When we pulled up, you saw a clean, pleasant, and well-kept area. The exterior is clean, has a modern look, and is very inviting.
It has a Glass Cactus vibe mixed with Mi Cocina. The room was very inviting when we walked in and had a great vibe. We arrived at 5:45 pm on a Tuesday. A couple of tables were seated, and the bar was packed with people watching the Dallas Stars pregame coverage. We were at the door for only a minute until we were sitting. I offered an option of a half booth, table, or full booth. We opted for the entire booth.
When we were seated, our server, Bobby, was amiable. He took our drink order and brought out water as well. The water came in these neat glass bottles they brought to the table. I love this concept because we never have to worry about having an empty water glass. Once you empty the bottle, it is replaced with a full one while your cups are still full.
I am an unsweet tea drinker, and the quality of tea matters to me, or it tastes like dirt water. Their tea was excellent. We ordered queso as an appetizer, and it did not disappoint. It was not my favorite, but it was better than a lot I've had. I ordered the steak fajitas for dinner, my wife ordered the steak chimichurri, and my daughter ordered the tomatillo enchiladas with sour cream sauce.
Everything was plated well and came out looking very appealing! I was overly impressed with the meat quality of the fajitas and loved that they were not served on that gimmicky fajita sizzling plate! We ate everything and cleaned our plates. The steak was cooked perfectly to order for both the fajitas and the steak as a whole. Even the rice had a good flavor and was not bland.
For desert we ordered the churros. They did not disappoint, and were served with a cinnamon ice cream. The churros were light, crispy, and worth every bite! I would bet they get this ice cream from Fate Creamery, because it was amazing.
If you want to add a new Mexican restaurant to your rotation, do not hesitate to check-in. Our server, Bobby, was fantastic, but it seemed like all the staff were well trained and happy to be there, so I think you may have a good experience with anyone.
The pricing was on par with the area, I even attached a copy of my receipt to share what a meal like this would cost.

Definitely going out their way to ensure a fantastic meal and experience. The skirt steak was impeccable, enchiladas and salmon were beyond a treat. Highly recommended, and will definitely visit again.

The mole enchiladas (enmoladas) are GREAT! My wife got the green enchiladas and they were also really good. I am Mexican and I was a bit skeptical about their flavor/taste, but this place is pretty legit. The service and atmosphere were excellent too. We will come back!!!
The only thing I did not like were the beans. The taste a bit off (kind of sour). We just did not eat them. But the enchiladas were that good that it overcompensated the beans.
Edit: we went back. I ordered the ceviche. It is AMAZING! The plate is an apperitive for two/three, and it is an explosion of flavors. I also ordered again the enmoladas and they are just amazing. Will definetely only come for the Mole!

This must be the worst Mexican place.
The fajita beef tasted awful, very slimey.
When the manager brought out the food he sat the plate down, and picked back up cause he said it didn’t look good. Then he brought it back out and said he put the beef longer on the flat top.
It was disgusting!!
We will not be back,

Pablo's Restaurant and Cantina is a hidden gem with a cozy atmosphere that instantly welcomes you. The friendly staff, especially Luis, elevated the dining experience with top-notch service and attentiveness.
Now, let's talk about the food—those brisket enchiladas were downright fantastic, and the cheese enchiladas were a flavor explosion! The restaurant maintains a clean environment, adding to the overall positive ambiance.
If I had to provide some constructive feedback, a tad more heat and spices in the queso would elevate it to the next level. However, that's a minor note in an otherwise stellar dining experience. Pablo's is a must-visit for those seeking a delightful blend of great service and delicious Mexican cuisine!

First time visit, placed a to go order.
Everything was pretty good, the nachos were just sort of smashed together and heavier on the black beans than the cheese.
Trendy decor and downtown location, The restaurant was busy, the staff my husband encountered for pickup were friendly.
We plan to dine in next time and try more menu items.

Pablos is a great place for date night. The food is really good and the atmosphere is nice. Parking is the biggest challenge here and you may have to park down the street. I have had serveral items from the menu and everything was great. The Shrimp enchiladas were awesome and the charro beans were very flavorful. My wife had the red snapper and it was amazing. They also serve a cornbread with some sauces on it that will amaze you at how good cornbread can taste. But with all that the only reason for not 5 stars is that their salsa is really bland and boring that tastes more like a tomato puree than salsa. My wife and I really enjoy eating here and highly recommend it.

As a retired Chef I can say this was fantastic and meets the expectation that I set in all the restaurants I ran. This restaurant will definitely be a staple for this quaint town. Keep it up and this will be a super hot spot. Balance and quality is what you definitely have.

Nice little find in Fate. The area and crowd at this location is so nice and friendly. My plate was great and delicious but not everyone in my party felt the same. I want to give it another try, get a different plate before I switch it to 5 stars. I’ll definitely be back to try something else. Drinks were good.
