I’ll start by saying that as a chef I’m very very critical of restaurants. That being said, as someone who lived in Chicago for six years and experienced delicious deep dish pizza my recent experience at Lou Malnatis was horrible. To be honest, the service was crap. The waitress seem like she didn’t care whether we were there or not. We never got refills on our drinks. But the worst part of it was the pizza. The supposedly famous deep dish pizza. What I got with my dining partner was a pizza that wept tomato water and essentially ruined the entire thing. There was very little flavor in this pizza. There was a lot of cheese. I’ll give you that. But the crust had basically zero flavor. And of course the tomato sauce should’ve been reduced or drained. It watered the whole thing down and made it basically inedible. It also didn’t allow for proper baking of the crust which resulted in a doughy interior. And isn’t it strange that the server didn’t ask why we were only eating a piece each from an 8 piece pie and not wanting to take it home? What a waste of money! Gratefully, three days later, I went with another friend to Giordano’s, and it saved my belief in Chicago deep dish pizza. But I will never go back to Lou’s. They’ve lost their way! Never remember going to this location while in Illinois. This Lou Malnati's was an interesting old looking home converted into this pizza, Bar, Restaurant with interesting rooms and spaces. Nice center bar with a side room where we sat that had a closed patio feeling. Today, we went with Malnati's salad, combo appetizer, and two large pies. One was the Lou's, and one was pepperoni and sausage. If I did it again, I would have gone with just the meat pie, which was more than enough and tastier than the Lou's pie. Great service and fun load place. Nothing that tastes as good as that butter crust pie. Our server, Rebecca, was amazing! The pizza was delicious and true Chicago Deep Dish! The unsung hero was the salad with the house dressing! Definitely get it! Slightly sweet with a vinaigrette finish. The cheese and bacon added flavor complexity that perfectly married with the other flavors. It was sweet, tart, creamy, and smoky all at the same time. A tour de force of flavor. The pizza was exceptionally tasty and the appetizer sampler was a plate of fried goodies with ranch and marinara. We truly enjoyed our first Lou Malnati's experience.
