Chef has a wonderful palate! Amazing food. In fact, we dined at Sublime 2 nights in the same week! Lovely outdoor seating, great cocktails. We got the happy hour discount on appetizers one night - all were great. Ordered from the entrees on the second visit and was very happy. Servers were attentive and friendly. Atmosphere is very comfortable and well decorated both inside and out. Looks a little gaudy from the online photos but in person the chairs and brighter colors are very inviting. The food was better than ROMA next door and came out relatively fast. Our waiter was a little bit brisk and not super friendly until later in the evening when we started asking more questions and having more conversations with him. Our beautiful waitress Farzi was very friendly and gracious. EVERY Restaurant needs a Farzi. Food was Over the top. HIGHLY RECOMMENDED. We were here for happy hour and I’m the picture with the lamb sliders you can see the drink. In America it’s known as a Moscow mule but I can’t remember the name they used. Theirs came with Johnny walker but we asked for it to be replaced with Jack Daniel’s, drink was very good. Sliders were a 10/10 definitely enjoyed that. The steak was ordered medium well, it was okay. Smaller than expected and could’ve had a bit more seasoning. Fish was good. Vegetables were roasted nicely. First time here and the food was great. The weather was rainy so we opted to eat at the bar which proved to be the best seat in the house. Lamb shanks were perfectly prepared along with everything else we ordered. My "pisano" bartender made the best martini on the island and made our overall experience exceptional. I’ve dined at Sublime twice in the last 6 months and both times were equally fantastic.This is the best food I had in St Martin. Service was impeccable, beautiful ambiance and great selection in the menu. I’d highly recommend this restaurant. Excellent restaurant, spent 1 week between Sint Maarten and Anguilla, and it was by far the best. Amazing service, excellent food, great drinks, and very comfortable atmosphere. Highly recommend to anyone visiting. We happened to have attended during happily hour, 5-7pm, where the drinks were 2 for 1 and appetizers, soups, and salads were all 30% off. We stopped in for drinks. A gorgeous restaurant and bar! Located in Maho above the street, 2nd floor. The decor is so colorful, fun and different. We had a chocolate martini, kettle one and soda, & cosmo. Knowledgeable and friendly Italian bartender. Wish we would have come earlier for dinner. Chic, elegant vibe, the best service we’ve experienced on the island (by far), and incredible food. We would highly recommend the charred octopus, lamb shank, seafood pasta (linguine angiole?), crème brûlée pistache, and for drinks: The Afterburner. All were very creative, fresh, and delicious!

We came to Sublime because another restaurant was closed. Glad we came! The ambiance is club/lounge. The happy hour espresso martini wasn’t good. It was watered down and poorly made. They were nice enough to take it back and replace it with A glass of wine which was good. The decor is very bright with comfy couches and chairs. Very clean. The menu is very sporadic. We ordered the ravioli for an app. It was DELICIOUS although we wish there were more than two ravioli. The shrimp and chicken pad Thai was one on the best dishes I have ever had. So flavorful! My husband DEVOURED the tempura dessert. It was delicious!
