Last night I finally made it out to the Screamin Chameleon Food Truck spot that houses quite a few options for food. I have seen and known about Spud Ranch for years and I hadn’t had the chance to try it. I’ve heard great things and it was finally time to get a Spud. They have quite a few options but what really caught my eye was the Gumbo Spud. I love Gumbo and it sounded very good and unique as I’ve never seen that combo before. I also ordered some fried mushrooms as well. Wow! The flavor of the Gumbo was slap yo momma good and the juice inside the spud created such a creamy and delicious bite. I loved it. I think it needs to be a permanent option! My friend and I had the pleasure of meeting the operator of the food truck who was incredibly friendly and gave us some funnel cake fries to try which were fantastic as well. I definitely dig the funnel fry option over a typical funnel cake as the texture and crunch are more superb in my opinion. I am glad I finally tried it and it definitely won’t be the last time! Now I want to give all the locations some love since they aren’t to far from me. I definitely will be recommending this place to anyone who enjoys a good baked potato with some pretty cool topping options!

This place has a variety of choices on the menu, but their specialty is Spuds or should I say Giant Stuffed Baked Potatoes. I have never had a baked potato cooked to such perfection. It was almost as if they had whipped it up and replaced it. But they didn't. It was just that perfect. I had the Frito Pie Spud it was topped with chili, cheese, fritos, sour cream, chives, and butter. I added jalapeños. OMG! Talk about huge. I couldn't eat it all. I ate on that potato 3 times. And it was delicious every time. It was my first time there, and the server was very patient and helpful. Can't wait to make my way back to try to different flavor.

We actually got ours from the food truck at the screamin chameleon in Universal City. This was our first time trying this and we were both very pleased. My husband and I both got the brisket potato and I got a side of fried pickles. The pickles were SO good. The potato and brisket were both moist and delicious. The potatoes are HUGE. I couldn’t even finish mine so I ate the rest for lunch the next day. We can’t wait to try the other stuff on the menu.

This was my first time at this location. I've been to the San Marcos location a few times over the years. I tried the hot wing spud - I got it to go and it was very good. Nice amount of heat on the hot sauce, but not too hot. The potato was nice and buttery as well.

Wow! Let me start off by saying these guys are experts when it comes to preparing a baked potato! Trust me when I say you can’t go wrong with whichever you decide. We recently tried the brisket spud and the chicken fried chicken spud.
The brisket spud had PLENTY of brisket! I would’ve been happy with just the brisket but then you add that on top of a baked potato and you have your taste buds dancing. The chicken fried chicken was also amazing! The gravy, chicken, cheese, and potato was a perfect combo.
Listen, my wife is a picky eater. When she’s taking 30 minutes to decide where to eat I just say “How about Spud Ranch?!” And it’s always a winner! Try it out, you won’t be disappointed!
Photo is of the chicken fried chicken, picture doesn’t do it justice!

It’s a chill spot to have a AWESOME baked potato 🥔 I ordered the Mac and cheese potato without bacon. I did add sour cream and it was extra ($1.07)but it was worth it. The potatoes are as big as your face! The macaroni was very creamy and cheesy. It was cheesy heaven. I was not able to finish it. I ate about half the other half I ate for dinner. I highly recommend this place if you are in to baked potatoes the variety is unbelievable!
