Great service and food. I had the Carne asada tacos, which are really good and filling. My husband had a bacon burger, and he said it was well seasoned and cooked perfectly. Patties are fresh! I was parked at the truck stop across the street for the night, and decided to walk over to Santiago's for dinner. Small town restaurants can be either bad or really good. Fortunately, Santiago's was the latter, and I was really happy with my meal. I ordered the 12 oz ribeye, which came out exactly as I ordered it. It came with a roll and two sides. The best part of a grilled steak is the little charred bits that form when the flames nip at the edges, and my steak had a perfectly cooked outside and medium rare inside. I couldn't have been more pleased. I hope my travels take me back to Colorado City, Texas so I can eat here again.
