This was a hard place to review. Eat! has so much potential, but so many issues too. A good management team would have this place doing a phenomenal job in just a few short months it they did some simple things. Hopefully someone will come in and help a restaurant live up to it's name. We will try it again but not for a while...

Great tasting large plates of food. A bit trendy, but not too cool to enjoy. We didn't like the automatic tip on the bill. I personally believe the quality of service and food quality ensures a great tip and a restaurant shouldn't ever mandate the tip. Lean on your integrity and count on your team to deliver the best experience. Everyone wins that way.
I really loved the eggs Benedict here. I got the spinach, roasted peppers, and veggies one. Might be one of the best ones I’ve ever had. All the food was super fresh and the bacon was perfectly crisp, I’d definitely come back here next time I visit colorado and I love that they have different flavors of mimosas as well!

Took a chance on EAT!, and we were not disappointed one bit! The service right off the bat when we walked in was absolutely friendly and kindly welcoming. We were seated immediately at a nice shaded spot on the patio. And our server was polite and efficient.
I ordered the Honey-Smoked Salmon Benedict, and every aspect of the meal was on point. From the hash browns to the delectable salmon, I will be returning!
The drinks (mimosas) were wonderful as well. Would recommend 10/10!

The food was awesome. I had the braised short ribs Benedict...creamy, slightly spicy bbq hollandaise sauce, perfectly poached eggs and flavorful shredded ribs over a soft but slightly crispy chibata roll.Ate every bite and thought about licking the plate. Sam had a bright smile to greet us when we walked through the door. Our server, Stephanie, was attentative without being annoying...you know what I mean. The braised rib bene was actually her suggestion. It was very noisy, that's the only reason I gave atmosphere a 4 star rating. When I go back I will request outside seating. Yes, I will be back. The other picture is of my son's chili relleno.... had a bite...crunchy, tender and not too hot. Took a massive cinnamon to go, but haven't tasted it yet.

Pretty neat little place. McKenna was an awesome server!!!
I tried the Mighty Meaty Skillet and it was delicious. There in house hot sauce was good recommend the green one.
Cranberry mimosa was good as well. Definitely recommend trying the cinnamon roll as well.

Jumbo Cinnamon Roll
Visited here today for the first time and had an excellent experience. Our server Gracie was spot on and very helpful with suggestions and was very timely and engaged.
We had the Flat-Iron burrito and the Southwest chicken salad and both were fantastic and I would recommend them! They also had a great special on margaritas for $5! Will be coming back soon! Good service, food quality and a great atmosphere/environment.

Huckleberry Stuffed French Toast
Most brunch reviews are on the weekend; we came on a weekday. Lots of availability and waitstaff attention.
This location is in a very nice strip mall. However, the parking is a little confusing. It's not terrible, just plan on some movement.
We each enjoyed a seasonal rum-based mimosa (not on the standard menu) followed by two of the favorites, each served with 2 eggs of choice: short rib skillet and the chicken and jalapeno waffles. Each were served with hash browns, unless you were opting for a substitute, maybe at an additional fee. (Our server was kind enough to order the eggs on the side.)
The short rib skillet was served with fresh tortillas..but the meat (while tasty) was a bit too dry. The chicken fillet was too thin to accompany this dish. And it was a weekday..., really, how? The hash browns were cooked perfectly. We were offered individual ketchup, followed by 2 bottles of hot sauce (though 1 was clogged~ so much for that.)
However, that jalapeno waffle KILLED it! An absolute PERFECT balance, even when I am neither a waffle or a spicy fan. I'd order it again, for the whole family. This waffle had flavor and consistency and really had the stones for its own plate. EAT! is worth a visit just for this waffle.
Give it a try, just not on a weekend.

Great atmosphere! Food was mostly fantastic! Service was a tad slow. The "Avocado Toast" is a bit misleading. Wish there were more of a toast texture rather than just Avocado bread. The flavors are there though. Green Chile is solid and their cocktails are great. I've been during the week and on weekends to see if food differs. Happy to say it doesn't. Just crank up the toaster another notch or two (even for the sourdough toast with the entrée) and this place would be perfect!
